Strawberry matcha chia pudding

One of my fav breakfasts as of late! High protein, high fibre, and only takes a few mins to meal prep for the whole week.

Recipe
-1 cup unsweetened soy or nut milk
-1 scoop vanilla protein powder
-1 tsp ceremonial grade matcha
-2 tbs chia seeds
-1/2 cup frozen organic strawberries

Blend milk, protein powder, and matcha. Mix with chia seeds and let sit for at least 20 mins but preferably overnight. Warm strawberries in a saucepan and mash lightly with a spoon (optional add a dash of maple syrup). Top chia pudding with strawberry compote and enjoy!
